Strawberry and Vanilla Summer Keto Dessert Loaf with a Coconut Drizzle

Summer has finally arrived and how better to celebrate than with this delicious Keto Dessert Loaf!

A rich Strawberry and vanilla summer loaf with a coconut drizzle and mixed berry topping. This is a beautiful low carb summer treat which is truly delicious, nourishing and bursting with antioxidants too.

💛 Blackberries, strawberries and raspberries are rich with antioxidants which can help to reduce oxidative stress. They are high in vitamins and minerals, high in fibre and can help lower inflammation in your body too. They are good for your skin and can improve your insulin sensitivity when combined with high carb foods.

💛 Coconut is rich in manganese which is essential for your bone health. It is high in antioxidants, healthy fats, amino acids and fibre too helping to contribute to blood sugar balance.

💛 Eggs are an excellent source of protein, rich in omega-3s for your heart and brain and rich in antioxidants for your eyes.

Keto Dessert Loaf Ingredients:
Cake:
2 cups almond flour
4 large eggs
1 cup strawberries, sliced
2 tbsps coconut oil, melted and extra to grease loaf tin
1/2 cup erythritol
1 tsp baking powder
1/2 tsp vanilla extract
Toppings:
2 tbsps coconut whipping cream
strawberries, blackberries and raspberries
desiccated coconut

Keto Dessert Loaf

Keto Dessert Loaf Method:
Preheat oven to 180C
In a large mixing bowl add the flour baking powder and stir to combine
In a separate bowl add the eggs, coconut oil, erythritol and vanilla and stir to combine
Add the eggs mixture to the flour mixture and stir well
Add the strawberries and fold gently into the mixture
Add mixture to your greased or parchment paper lined loaf tin
Bake in the centre of your oven for 40 mins. Once baked set aside to cool before decorating
To decorate add a layer of coconut cream on top of the cake. Refrigerate for around 10 mins for the cream to set as this will make it easier to add your toppings. Garnish with fresh strawberries, blackberries and raspberries and add a sprinkle of desiccated coconut.
