Who says you can’t have desserts on keto?

Following a ketogenic diet does not mean that you have to miss out on sweet treats.

In fact, there is an abundance of delicious high fat, no sugar keto desserts that will crush your sugar cravings. You’ll find that once you start getting creative, your desserts will beat the sugar-laden treats you have had in the past! And you can sneakily spoil friends and family with keto friendly desserts that are so good, they won’t believe they’re keto!

Playing with pure cacao is fun! We’ve been experimenting with making dark chocolate cookies and our own chocolate.

Here is our favourite keto cookie recipe:

Double Death by Chocolate Keto Cookie Recipe

Makes approximately 10 cookies:

Ingredients:

2 eggs

50g of butter

3 tbsp coconut flour

½ tbsp psyllium husks

1-2 tbsp of powdered or granulated stevia

½ tsp baking powder

1/2 tsp Xantham gum (to give a ‘gooey’ texture)

1tbsp of cacao nibs

100g of pure 100% cacao chocolate bar (we love Montezuma’s)

A handful of chopped nuts to garnish.

Instructions:

Preheat the oven to 185 degrees. Mix everything together except the 100% pure cacao chocolate bar and chopped nuts.

Shape into cookies and place on a tray lined with parchment paper or greased with butter.

Bake for 13 minutes then remove the cookies and then place a cube of 100% dark chocolate on top of each cookie and return them to the oven for 2 more minutes. Remove the cookies from the oven and leave to cool a little and sprinkle on the chopped nuts.  Enjoy still warm while the gooey dark chocolate drips down the cookie! Even better accompanied with hot chocolate or a glass of full fat milk. Mmmm!

We also created another delicious keto cookie recipe in which we swapped the cacao nibs for grated ginger and melted dark chocolate into the cookies.
